1. Chicken parmesanSo I just got back from family vacation….Where I ate, ate and ate some more. Not to mention spent a lot of moola. So it was time to get back to healthier lifestyle but really budget it this week. I had some leftover tomato sauce in the freezer and moz cheese in the fridge so [...] 8/26/2012 2. Ole!So to say I have had a couple crazy weeks would be a huge understatement. However I have been cooking A LOT to deal with my stress relief.
One thing I made last week that tasted super yummy were some bean buritos. I like TBell like the next girl but it is soooo bad for you. So I used my pressure cooker and blender and voila! Pureed beans and oh so yummy! I am completely revamping my voice over studio so I wont be able to do those for another month or so. P.S. we are moving out to a ... 8/15/2012 3. Mac and cheeseWow this week has been insane for this mama. I have been auditioning and acting since sunday. Non stop days equal not as much time in the kitchen as I would like. But I did make recently some Mac and cheese that tasted pretty yummy. Recipe is simple…and if you are feeling creative you can mix and match this dish to your liking. You can also make it vegetarian by adding broccoli. NOTE….if you add broccoli I highly suggest sauteing the florets instead of steaming them. Tha... 7/19/2012 4. Chicken pasta with veggiesSo I had all these different things but nothing that screamed a recipe. I always prefer red sauce over white. Not only is it healthier but cooked tomatoes have lycopene, a cancer fighter. I threw some things together and the recipe came out great! Note the bake fried chicken fingers I made can be made with just plain chicken.

I had some beautiful organic strawberries in my fridge and figured…chocolate covered strawberries are yummy but not so healthy. So I decided to make Mock chocolate covered strawberry oatmeal. Came out yummy and very satisfying. If anyone is on a diet, eating chocolate in the morning will actually make you less likely to eat junk during the day and will help you lose weight.

So I decided I would slice them up in to rounds and bake fry them. The results? Fantastic!!! Me and my hubby couldn’t stop eating them AND my 11 month old gave them one tiny thumb up! This is a super easy recipe that anyone, yes anyone can make. Its also would make a great appetizer!

So I had some shredded carrots left, a small zucchini and summer squash and onion…What to make what to make? Well Voila… I made a delicious side dish that the whole family would love! Now this is where a pressure cooker would really come in handy folks. Hint Hint! But if you don’t have one, no worries!! This is a two pot meal and ready in about twenty minutes! If y... 7/4/2012 8. Mama mia!Hi All! I hope you love this recipe as much as my family does.
this is for one large hand tossed pizza. I used my food processor so I can’t say I have ever kneaded this dough by hand. My food processor is a kitchen aid. They are quite affordable.

So after talking with some friends I decided to get on my soapbox in a different format. I love to talk about my passion for cooking to anyone who would listen. I am on a mission to throw out old stereotypes that cooking is too hard or healthy eating is expensive. Lots of people post recipes and I use them too, but I thought it would be nice to allow me to walk you through making a dish. I wanted to give a “girlfriend chat” sort of feel to it. Please take a l... 7/2/2012
