The consistency of God is important because it guarantees that the promises of God, made 2000 + years ago, are still applicable to us today. God’s consistancy leads us to trust Him and we do not have to worry about Him changing His mind or regretting what He has said. He is good despite the ever changing nature of humanity and we do in the world.
