As we're all aware by now, the new coronavirus (and the COVID-19 disease it causes) present special challenges for senior living communities, health centers, and skilled nursing facilities. The good news is that many communities are already used to handling contagious outbreaks such as C. diff, norovirus, and the flu, so taking extra precautions comes naturally. And yet, there may be no setting where residents have more contact and more chances for transmission than a dining facility.
Today we're joined by Chef Shawn Boling, who is experienced in leading culinary teams through outbreak situations. He talks us through some of the methods that he has used to help communities prevent the spread of viruses, as well as adapt their culinary and dining programs to ensure residents are still taken care of.
