Our restaurant of the week is RoCA of Court Avenue and with us is executive chef Aaron Holt who has been with the company since it opened nearly four years ago. Here we talk about the decor, the design of the menu, the importance of professional training, the "back-of-house", chain saws (yep!) and smoking cocktails. No, not "smokin'" but smoking...
