I am so excited to share today’s episode with you. I am a huge Champagne fan, actually I am a fan of all bubbles, but there is something about Champagne that is special. They will you that it is the soil and the weather. They will tell you that it is the strict regulations on how they can process the wine. They will tell you that it is the pruning methods or the second fermentation in bottle.
I cannot guarantee exactly what it makes Champagne special, but I can guarantee that it is. So when Champagne Pommery reached out to me to ask if I was interested in interviewing the 10th cellar master and discuss one of the oldest Champagne houses, I of course was interested! But when they told me that Champagne Pommery is now producing California Sparkling, let me tell you it was a no brainer. I wanted to hear the story!
