January is almost over and we're rounding out our culinary triptych of chefisodes (sorry) with Great British Menu Welsh champion Aled Williams. Aled is a supremely talented and hard-working chef from the Welsh island of Anglesey. He now lives and works from his True Foods headquarters in North Yorkshire and that's where we went to meet him.
Aled's diligence, perfectionism and hard work are plain to see as he and Craig talk kitchen hierarchies, antipodean fish, perfect roast chickens, kitchen hours and loads, loads more.
