Silva Jackson has had a long career in fine dining and then fell in love with American BBQ, especially the Texas style of smoking meat. She came back to Prague to bring some of what she'd learned to Czech palates and culinary contexts. It's sort of a fusion - let's call it Czexan.
We talk about her career, her return, her philosophy and how's she's helping shape the future of the Prague food scene.
