Massimo è un barese da sempre affascinato dalla NZ… per via della lontananza, la natura, i maori, gli All Black. Particolarmente voleva conoscere i maori ed è venuto come turista nel 2004. Durante quel viaggio era rimasto sorpreso che in un paese con cosi tanto buon latte, non ci fosse produzione di mozzarelle fresche. In Italia lavorava come cameraman, dopo essere partito professionalmente come ragioniere e poi come programmatore di software. Sicuro delle sue capacità di abbracciare nuove direzioni e dopo aver approfondito i principi e l’arte della mozzarella nella sua terra, nel 2010 decise di tornare in NZ per avviare un caseificio di formaggi freschi pugliesi. Oggi i suoi prodotti si trovano in tutti i supermercati neozelandesi e le sue mozzarelle, burrate, stracciatelle e ricotte continuano a ricevere medaglie e riconoscimenti. Ci parla della sua azienda, della struttura di vendita in NZ e della qualità ideale del latte per fare la mozzarella, bilanciato in grassi e proteine.
