SHOUT OUTS
First, let us thank James and Sarah of the Mouse Ears and Magic Podcast. This past week they had us on The Disney Bunch and it was tons of fun! If you want a good laugh, we hope you’ll check it out.
Also…Happy 1st Anniversary to our friends over at Just a Podcast in Paradise. Steph and the DIP Crew are masters at planning Florida vacations at www.justadayinparadise.com! They celebrated their anniversary on April 13th… and do you know how? By having us on their show! We talk Florida Runcations and how anyone can get into running so they can accomplish, explore, and indulge! Listen to us on episode 43 of their show here:
Episode 43: I Thought They Said Rum: How to Plan a Runcation with our Friends at Run, Eat, Drink Podcast!
Last but not least, thanks to all our patrons, we have been able to expand our studio and keep the show going over the last year. We can’t express how much it means to us. We’d like to welcome new patrons at the $5 Founder level: Lisa, of Custom Bowtique By Lisa and Rhonda Kirk-MacDonald (Rhonda Lee!) Plus our patron Cheryl went from Fan to Founder status, too! We are now only 1 patron away from 20 of you supporting our humble little show. Your support means so much to us. Your names are all in lights https://www.runeatdrink.net/patron-wall!
RUN
In Episode 157, we talked with the team from the Will Run For Podcast, Thomas Stover, Diana Decatur, Michael David, and Erin Petz. They told us about their own running and creating their podcast as well as their fun Will Run For Virtually Live Race.
This week we recap the race that we were able to run with many in the Runcation Nation!
We were featured on their Inside the Runners Studio Segment a few weeks back. Then we heard they are hosting a fun race with a huge medallion and had to tell all of you about it!

EAT
Yes we indulge, but we also share healthy recipes with you, too! This week, we’ve got a healthy meal from our test kitchen. It can be a vegetarian or vegan option for lunch or dinner.
Hamburger and Macaroni was a staple for Dana growing up. We wanted to see if we could make it as a healthy recipe. This week, we bring you the Vegan version from the Run Eat Drink Pocast Test Kitchen, including meatless crumbles from Gardein (Not a sponsor, but love their products!).
Meatless Hamburger Macaroni Recipe
(The recipe includes Amazon Associate Links to ingredients. These links help support the show at no additional cost to you. Use them or not, we just put them here to make it easier if you do shop there and want to grab the ingredients.):
1 Package (13 oz) Gardein Meatless Crumbles
1 Package (8 oz) of Banza Elbows Made from Chickpeas
4 Cans (14.5 oz) Fire-Roasted Diced Tomatoes
1 Medium Onion Diced)
4 Cloves of Garlic, Minced
1 Teaspoon Black Pepper
Sprinkle of Dayia Dairy-Free Cheese (Optional)
Directions:
Cook the pasta according to the package instructions. Save 1 cup of pasta liquid. Drain, rinse and set aside cooked pasta.
In a large pan or dutch oven, add diced onion over medium high heat. Sweat the onion, adding a bit of water to prevent burning or sticking.
Once the onion beomes translucent, add the entire package of meatless crumbles and stir, sauteeing to warm them through and browning the crumbles.
Stir in the garlic and black pepper. You can add a little more water (1/4 cup) as needed to help the cooking process along, steaming the crumbles and adding a little bit of moisture to prevent the crumbles from drying out.
Add 4 cans of fire roasted diced tomatoes, with all of the juice. Add the cup of withheld pasta water and bring to a lightly bubbling simmer. Add the cooked pasta, stirring gently to combine, but not too vigorously to break the macaroni.
Spoon into a bowl. Top with sliced jalapeno or a bit of parsley and a sprinkle of your favorite vegan cheese. We like Daia for its melt and overall flavor.
For a smokier flavor, consider adding some cumin. For more heat, add a pinch of crushed red pepper flake or dice a jalapeno and toss it in when you sweat the onions.
Serving Suggestion:
Serve in a bowl with chopped jalapeño and a dash of hot sauce
